The original overnight oats

Bircher Muesli



This breakfast dish was invented in the 1890‘s by Dr Bircher-Benner for his patients in Zurich, in the original recipe, oats are soaked in water and sweet evaporated milk then lemon juice and grated apples are added to the mixture. The following recipe is an adapted version and uses oat milk and apple juice as the soaking liquid. It’s served with coconut yoghurt and dried fruits in addition to the traditional grated apple.



Ingredients (makes 4 servings)


200g gluten-free whole rolled oats

250ml oat milk

125ml unsweetened apple juice

1 tbsp honey or to taste

75g dried mixed fruit

3 tbsp coconut yoghurt

2 medium apples, 1 coarsely grated, 1 sliced


Method


1. In a bowl, mix the oats, oat milk, juice, honey, dried fruits and grated apple together. Cover with clingfilm and place in the fridge overnight.

2. Take the oats mixture out of the fridge.

3. Divide the muesli into individual dishes. Top with coconut yoghurt sliced apple before serving.
